Pasta with Fresh Asparagus

Fresh asparagus sets this pasta apart in a category all its own. Rich, creamy and delicious.
Ingredients
- pound fettuccini
- 3 TBSP grated Parmesan cheese
- 1 large bunch fresh asparagus
- cup whipping cream or half and half
- 1 clove garlic, minced black pepper, freshly ground
- 1 TBSP olive oil salt, to taste
- 1 egg, beaten
Instructions
- Cook pasta according to package directions.
- Clean asparagus and slice across the stalks into pieces 1/4 long.
- Add the oil to a large frying pan and add garlic to the hot oil for a few seconds.
- Then add the cut-up asparagus.
- Toss until the asparagus is bright green in color and barely tender, about 2 minutes.
- Quickly mix in the beaten egg and the grated cheese.
- Add the cream and the salt and pepper.
- Bring to a simmer for a few minutes while the pasta finishes cooking.
