Pasta with Fresh Asparagus

Fresh asparagus sets this pasta apart in a category all its own. Rich, creamy and delicious.
  • pound fettuccini
  • 3 TBSP grated Parmesan cheese
  • 1 large bunch fresh asparagus
  • cup whipping cream or half and half
  • 1 clove garlic, minced black pepper, freshly ground
  • 1 TBSP olive oil salt, to taste
  • 1 egg, beaten
  1. Cook pasta according to package directions.
  2. Clean asparagus and slice across the stalks into pieces 1/4“ long.
  3. Add the oil to a large frying pan and add garlic to the hot oil for a few seconds.
  4. Then add the cut-up asparagus.
  5. Toss until the asparagus is bright green in color and barely tender, about 2 minutes.
  6. Quickly mix in the beaten egg and the grated cheese.
  7. Add the cream and the salt and pepper.
  8. Bring to a simmer for a few minutes while the pasta finishes cooking.
